Salt-Roasted Eye-of-Round

Ingredients
- 5 lb eye-of-round beef roast
- 1 cl garlic, crushed
- 10 C coarse salt
- 2½ C water
Instructions
- Pat the meat dry and rub with the garlic.
- Moisten the salt in a large bowl bit by bit with water, stirring and adding only as much water as needed to form a thick paste.
- Put half the salt paste in a roasting pan, put the meat on top, and add the remaining salt paste, packing tightly around the roast with your hands.
- Roast in the oven at 400 until done. Remove from the pan, let stand 10 minutes, then remove the salt crust.
- Carve and serve.
