Salt-Roasted Eye-of-Round

Ingredients

Instructions

  1. Pat the meat dry and rub with the garlic.
  2. Moisten the salt in a large bowl bit by bit with water, stirring and adding only as much water as needed to form a thick paste.
  3. Put half the salt paste in a roasting pan, put the meat on top, and add the remaining salt paste, packing tightly around the roast with your hands.
  4. Roast in the oven at 400 until done. Remove from the pan, let stand 10 minutes, then remove the salt crust.
  5. Carve and serve.
